Ancho Chiles: Dried Poblano chiles (Capsicum Annuum) are also known as Ancho Chiles [Ahn-cho]. The word "ancho" is spanish for "wide", the chiles are generally flat,
triangular in shape, and one of the largest chile peppers. (Chiles are the second most popular condiment after salt.) Anchos have a dark red color and are slightly sweet with a moderate
heat (1,000 to 1,500 Scoville units). Dried, the flavor of ancho chiles is enhanced over the poblano, and they have a better shelf life and are easier to work with. Dried chiles offer
great convenience for commercial kitchens and restaurants as they are easily stored and do not require refrigeration or special handling.
Common in mole, these chiles are produced in the heart of Mexico. Used along side Mulato and Pasilla chiles, and sometimes mistaken for Mulato and Pasilla chiles, Ancho chiles can grow to 6
inches long and 3 inches wide. They can be purchased as whole dried peppers, granulated, powdered, or as a paste. A member of "the holy trinity" of chiles (with Mulato and Pasilla), they
are very common in Mexican quisine and can be substituted for other chiles when necessary.
